Spitzbuben cookies are a family tradition. Once a year, around this time, we make up a batch of these delicious sandwich cookies, and for good reason. They are very hard to make!
The dough has to be chilled and rolled out several times. Kathy (my sister in the picture) figured that this would help, since the dough crumbles easily. She was right, because it definitely worked!
Each circle is the bottom layer of a cookie. Don't they look delicious?
My sister Karen is very good in the kitchen, especially when it involves baking.
This is my other sister Annie. I caught her snitching cookie dough on camera and her expression was priceless. We love cookie dough!
The long process of making cookies finally came to a end and each cookie was filled with jelly. We came up with grape, apricot and strawberry. My personal favorite has always been strawberry, but last year Karen persuaded me to try a grape. Biting into the cookie, I found that I absolutely loved it. I hope that I can eat both flavors this year. They both taste so good.

Hi Emily. I finally found your blog. Looking at the cookies I think that If I'm still alive and standing I just might make some next Christmas to give away as presents.
